Jerk Tofu Salad: A Flavor-Packed Meal You Can Make at Home

Ingredients



For the Salad:


  • Mixed greens (spinach, arugula, or spring mix) – about 4 cups

  • Cherry tomatoes, halved – 1 cup

  • Cucumber, sliced – 1 medium

  • Red bell pepper, thinly sliced – 1/2 cup

  • Carrots, shredded – 1/2 cup

  • Optional toppings: avocado slices, nuts, or seeds



For the Tofu:


  • Firm tofu – 1 block (14oz)

  • Olive oil – 1–2 tbsp

  • Salt and pepper – to taste



For the Jerk Sauce:


  • Eccle’s signature Jerk Sauce – 1/2 cup (or more to taste)






Instructions



Step 1: Prepare the Tofu


  1. Drain the tofu and pat it dry with a paper towel.

  2. Cut the tofu into cubes or slices, depending on your preference.

  3. Heat olive oil in a skillet over medium heat.

  4. Add the tofu, season with salt and pepper, and sauté until golden brown on all sides (about 6–8 minutes).



Step 2: Assemble the Salad


  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, and shredded carrots.

  2. Toss lightly to mix.



Step 3: Add the Jerk Sauce


  1. Drizzle Eccle’s Jerk Sauce generously over the tofu and vegetables.

  2. Toss gently so everything is coated without crushing the salad.



Step 4: Serve & Enjoy


  • Arrange the salad on individual plates or a serving platter.
