Ingredients
For the Salad:
Mixed greens (spinach, arugula, or spring mix) – about 4 cups
Cherry tomatoes, halved – 1 cup
Cucumber, sliced – 1 medium
Red bell pepper, thinly sliced – 1/2 cup
Carrots, shredded – 1/2 cup
Optional toppings: avocado slices, nuts, or seeds
For the Tofu:
Firm tofu – 1 block (14oz)
Olive oil – 1–2 tbsp
Salt and pepper – to taste
For the Jerk Sauce:
Eccle’s signature Jerk Sauce – 1/2 cup (or more to taste)
Instructions
Step 1: Prepare the Tofu
Drain the tofu and pat it dry with a paper towel.
Cut the tofu into cubes or slices, depending on your preference.
Heat olive oil in a skillet over medium heat.
Add the tofu, season with salt and pepper, and sauté until golden brown on all sides (about 6–8 minutes).
Step 2: Assemble the Salad
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, and shredded carrots.
Toss lightly to mix.
Step 3: Add the Jerk Sauce
